The craftswoman and the tasting La Timpa

The craftsmanship of straw, to create objects such as baskets and bags, has ancient origins in Sicily and is strongly linked to the peasant world. It is an art handed down from generation to generation and represents an important symbol of the Sicilian territory, even if almost disappeared.

The master craftsman called “canestraio” works with manual techniques such as weaving, creating real works of art such as bags and baskets keeping alive the art of straw processing and ancient traditions.

Seeing a craftswoman at work is a real privilege, a wise manual work that you can learn, a simple and personal experience, with an artist who will teach you step by step the art of straw (from the ancient grains) weaving and its processing. A versatile craftswoman who transforms small objects into works of art.

Our selection of bakery products, cheeses and wine, will brighten your program to make the experience unique.

  • The practical test together with the craftswoman;
  • Tasting with La Timpa products;
  • Visit to the water mill.

“Cheesemaker”

A guided enogastronomic journey to know the Sicilian cheeses and traditional breads, from the ricotta cheese production to the stretched cheese process demo to the tasting of different types of cheese and traditional breads stuffed prepared with ancient grains and stone milled flour of our production.

In the beautiful landscape of the Santa Domenica valley, we have thought of a unique and exclusive experience for our guests, to discover our territory rich in traditions and history. We will present you two products, which are perfectly combined bread and cheese. The ancient Sicilian grains, the water mill, the stone-ground flours and then… fresh ricotta cheese, the main product of Sicilian cuisine and traditional cheeses, a perfect match for lovers of local and refined products.

Thanks to the collaboration with an expert cheese maker, you will discover the secrets and the different stages of ricotta cheese process, through surfacing and collecting, in a traditional way.

After the ricotta cheese production, our guests will taste warm ricotta with the bread of our production, olives and dry tomatoes.

In addition to ricotta, our cheese maker will show you the stretched cheese process used to make fresh provola and our famous caciocavallo cheese, parallelepiped shape, and you will have the opportunity to make your own provola to taste just produced.

You will not miss the PDO extra virgin olive oil Monti Iblei La Timpa, an interesting organic blend of our production.

To delight the experience, the scaccione with “tuma” and anchovies, expertly prepared by our chef, to end lunch a traditional dessert of our production.

The program includes a short visit to the water mill at work, the experience with the cheesemaker, ricotta tasting with warm bread, the stretched cheese process with the production of small provola, for each participants, the tasting of scaccione with anchovies, the aperitif with olives and dry tomatoes and the oil tasting and wine glass.

Taranta and aperidinner

The Sicilian tarantella is a melody that tells stories of other times. This type of dances and melodies are typical of all Southern Italy since the seventeenth century.

The term tarantella comes from “taranta”, a dialectal word used to refer to the tarantula, a poisonous spider of Southern Europe.

The tarantella was danced during popular festivals and, after the Middle Ages, the frenetic rhythm was considered a practice linked to healing, a sort of exorcism to drive out demons.

There are different types of tarantella based on the area of Sicily. There are dances for any type of celebrations, for the Carnival, for the courtship, dances for the harvest, dances for the traditional village festivals or for saints of the country. The Sicilian tarantella is performed in traditional colorful costumes and the instruments used to play include accordion, flute, Marranzano and tambourine

U ballu a chiovu

It is the Sicilian tarantella performed during the wheat harvesting season. At the end of a sunny day of work, the farmers met on the farmyard and, accompanied by musical instruments, they enjoyed dancing. The name is due to the fact that during the steps, the feet always beat the heels in the same place.

The experience includes a demonstration of two tarantella pieces performed by the students of the ‘asd dance’ dance school in Ragusa, as well as an exclusive 45-minute private lesson to learn the basic steps of the tarantella and the aperidinner including local cheeses, bruschette, scaccia or pizza, olives and dry tomatoes, bread of our production and oil. We will offer you red wine glass from Sicilian wineries and don’t miss the visit to the watermill.
