We finally found, after researches based on the physical characteristics of the soil, the dirt we were looking for to produce organic Russello wheat varieties to grind in our stone mill; there are 7 hectares of flat soil in Contrada Mastricello, not far from our farm, well exposed to the sunny side, and with approximately 30 cm of soil useful to cultivation, perfect for the production of ancient grains as in the past. All these features ensure high quality products rich in nutrients because of the lack depth of the soil which limits the height of the ear and its consequent enticement.
